Harvesting and milling take place between October and November, with each day dedicated to selecting the finest fruits at the optimal stage of ripeness, in order to produce a complex, harmonious, and well-balanced extra virgin olive oil.

The resulting blend ensures harmony and elegance in the final product. These olive varieties are hand-harvested, with only the finest fruits selected and promptly cold-pressed in our mill. Each processing cycle is tailored to the specific quality of the olives. At the end of the milling process, the oils are tasted by our team and then blended to create a truly unique oil—elegant and versatile.
