Hand-harvested in October, the olives are cold-pressed within 12 hours of picking, resulting in a Monocultivar oil distinguished by its intense and captivating aromas.This single-variety olive oil is rich in aromatic notes, featuring clear hints of freshly cut grass, artichoke, thistle, and subtle almond undertones.
